Last night I had one of these food frenzy moments. In less than two hours I made a lemon pound cake (2nd time in less than two weeks) and something I tried for the first time: Cereal Chevdo.
I got the recipe from Y. and S., who also gave me the recipe for the kulfi ice cream.
Ceral Chevdo is a spicy cereal mix popular in India. Super easy to make and also super easy to eat as a snack if you can handle the heat. I've never tasted anything as spicy as this. Even mapo tofu is not close.
I found it specially delicious for the apéritif. The spiciness makes you drink more. Any good bar tender should considerate displaying some Cereal Chevdo on the counter instead of olives or grilled peanuts. Maybe good for business, just sayin'…
This recipe is a dream for cereal eaters. All your favorite cereals in one mix! Corn flakes, Rice Crispies, Cherrios, Chex and Kix.
Also what makes me really like this snack is the fact that it's baked and not fried. I know, I know, details…
Ingredients for 5 cups of cereals (1 cup of each):
-1 cup canola oil
-2 teaspoons rai and jiru (mustard and cumin seeds)
-2 teaspoons turmeric
-2 teaspoons mirchu (crushed red pepper)
-3 teaspoons salt
-3 teaspoons sugar
-3 teaspoons panipuri masala
-2 teaspoons laving and taj (cinnamon and cloves)
-3 teasponns paprika powder
Pre-heat the oven at 350°F
Put cereals in there for 15 minutes till they become golden.
In a huge pan or in my case, a wok, (remember you're dealing with 5 cups of cereals here) stir together the oil, the mustard seeds and the cumin. When they sizzle and turn color, add all spices and quickly add the cereals. Mix until everything sticks. Et voilà !
